simple syrup

1 cup water
2 cups sugar

Simple syrup is an ingredient in many drinks. In bars it's often replaced with manufactured mixers that contain corn syrup.

Combine sugar and water in a pot over high heat until it's just begun boiling. While it heats up, stir until the sugar is dissolved. Let cool and pour into a sealable container -- I use a fancy bottle with a ceramic stopper and gasket.

I keep it in the refrigerator with good results. After a time the sugar tends to form crystals. I've heard reports of "things" growing in old simple syrup, so don't make a year's supply.
